Produce is always best when it is fresh and in season. If you are interested in taking advantage of fruits and vegetables that will be in season during the summer, this article is for you! Here, you can learn about fruits and vegetables that are in season now, as well as healthy recipes that you can make that incorporate these foods.

There are many different vegetables that are in season during the summer. A few common ones include:

  • Corn.
  • Avocados.
  • Cucumbers.
  • Tomatos.
  • Zucchini.
  • Eggplant.

You can incorporate these vegetables into delicious dishes. Here are a few of my favorites.

Black Bean Salad

Black bean salad with corn and avocados is more than just a side dish! There is enough protein and variety that you can make this dish the main meal. It is also a great salad to bring to summer picnics or to serve at your barbecue. This salad has everything – the refreshing taste of fresh corn, the creaminess and good fats in avocados, the acidity of citrus, and the healthy protein that comes from black beans. To make this, you will need:

  • A cup of fresh corn kernels, grilled or sauteed (about 2 ears of corn).
  • ½ of a red onion.
  • One diced tomato.
  • A small avocado, diced.
  • 1 can of black beans.
  • Herbs of your choice, such as cilantro or parsley.
  • Salt and pepper to taste.

Toss these ingredients together and add a dressing. You can make a great lime dressing with:

  • ¼ cup of good olive oil.
  • A minced clove of garlic.
  • The juice of 1 ½ limes.
  • Salt and pepper to taste.

This is a cool, refreshing, and healthy salad that utilizes summer vegetables.

Tomato and Cucumber Salad

Sometimes the most delicious dishes are the simplest ones! In this salad, the vegetables are really the stars. Try to find the best quality tomatoes and cucumbers that you can. This might mean growing your own vegetables or getting vegetables from a friend’s garden. You can also buy fresh produce at a farmer’s market or at a produce store. To make this salad, you will need:

  • 5 tomatoes cut into large slices.
  • ¼ thinly sliced onion.
  • 1 thinly sliced cucumber.
  • A drizzle of a few tablespoons of quality olive oil.
  • 2 splashes of red wine vinegar.
  • Salt and pepper to taste.

This is a simple recipe, but it is also delicious, especially when these vegetables are in season. Consider buying some good quality bread to soak up all of the leftover juices – that’s my favorite part!

Summer Fruits

Some fruits that are in season in the summer are:

  • Strawberries.
  • Blueberries.
  • Raspberries.
  • Blackberries.
  • Cherries.
  • Plums.
  • Nectarines.
  • Peaches.

You can make a classic fruit salad with good quality fruits that are in season during the summer. Another great thing to consider is incorporating berries into sauces or salads for savory dishes. Arugula (another summer vegetable), goat cheese, strawberries, and balsamic dressing, is a classic combination for a simple salad. Berries also work well in sauces for chicken, lamb, and other meats.
